THE COLD WEATHER REQUIREMENTS

Our vines are resting to endure the severe winter conditions. They will come out from hibernation in the spring, only after meeting their “cold weather requirements”, meaning having “hibernated” for at least 300 hours below 7 °C. Snow is good for the soil because it replenishes the water reserves, it protects the unripe vine shoots, it allows for an ideal germination and growth of our wheat crops, and finally it reestablishes a balance with the insect population.
